Was feelin’ like a southern girl – ain’t nuttin’ better than fried chicken & potato salad! And my picky Roman husband LOVED it.

Fried Chicken: marinated in a curry slurry (batter), then deep fried. Super spicy dipping sauce on the side. (full disclosure – picked it up at my fave chicken/som tum joint. why slave in the kitchen when somebody else does it soooo well – and cheap?)

Potato Salad: potatoes boiled whole in a super salty brine (makes the texture lovely/creamy), a bit of leftover ham, celery/onions/parsley/thyme chopped finely, boiled eggs, mayo/dijon mustard/organic soy sauce/sherry vinegar creamed together.
