Shrimp & Grits, American Southern Cuisine

Was missing home a bit, so decided to make some truly (southern) American comfort food: Shrimp & Grits. For all of you that are unfamiliar with grits, they are a staple in the south: ground corn, kind of like a more refined polenta - less coarse.

The grits are topped with cheddar, pancetta and sauteed shrimp with a garlic, vegetable broth reduction. Ms Q's (non-American) husband loved it and ate 3 plates! (of course in the morning we were at the gym, to pay in sweat for this decadent indulgence)

Cross-cultural melange

Boneless chicken thighs, sautéed in an olive oil, fresh sage, shallots, sake, mustard, honey, sea salt and chili powder reduction.

Fresh carrots, roasted with olive oil, sea salt, shallots, raisins & cumin

Syracuse salt potatoes: boiled in highly salted water (they become creamy inside!) Then tossed in a garlic/sage butter sauce.

Cross-cultural melange: duet (Ms Q made the carrots & potatoes, husband handled the chicken). Dinner was highly flavored, but the muscled cabernet sauvignon was up for the task!

Ms Q was feelin' fancy, so created this after dinner duo: dark rum with raisins, fresh apple/ginger/brown sugar/cinnamon jus. Served with cantuccini biscotti (italian almond cookies) perfect for dipping!

Arugula wrapped with spicy chorizo then toothpicked together with toasted fresh whole wheat bread dressed with a bit of garlic & olive oil. This began as bruschetta (Ms Q tip for non-italian speakers: the "ch" in italian is always hard, sounds like "bruscKetta"), but husband switched it up.

Rotisserie-roasted Pork Loin

Pork Loin: marinated in a herb brine overnight, covered with an herb paste (sage, garlic, rosemary, olive oil) then roasted on a rotisserie. so tender, juicy and flavorful!
Served with garlic/rosemary roasted potatoes

This is one of my all time fave dishes that my husband makes. He learned it from his late mother, who was taught to make it by her friend, the late actor Marcello Mastroianni.

Khao Soi

Yummmy Khao Soi is a beautiful thang: deep-fried crispy egg noodles, pickled cabbage, shallots, lime, nam phrik phao, and meat in a curry-like sauce containing coconut milk. Thank goodness I know someone from Chiang Mai who treats me to this northern Thailand specialty!

Fried Chicken & Potato Salad

Was feelin' like a southern girl - ain't nuttin' better than fried chicken & potato salad! And my picky Roman husband LOVED it.

Fried Chicken: marinated in a curry slurry (batter), then deep fried. Super spicy dipping sauce on the side. (full disclosure - picked it up at my fave chicken/som tum joint. why slave in the kitchen when somebody else does it soooo well - and cheap?)

Potato Salad: potatoes boiled whole in a super salty brine (makes the texture lovely/creamy), a bit of leftover ham, celery/onions/parsley/thyme chopped finely, boiled eggs, mayo/dijon mustard/organic soy sauce/sherry vinegar creamed together.

Fly Cocktail: Sidecar

Retro Sidecar: brandy (or cognac), cointreau, lemon juice, sugar rim
A Sidecar is the perfect pre-prandial tipple, but no more than 2 - they will sneak up on you! Frank Sinatra or any Ratpack artist is a must for the musical soundtrack.

Delicious super fresh tuna, scampi, prawns at one of my fave Roman haunts, Osteria de Memmo. Located in the center of bella Roma, near Piazza Navona, you will fall in love with the gregarious, charming owner, Memmo and his stellar frutti di mare, the same way I did!
